Don't Throw Out the Green Tomatoes: Sort, Ripen, and Use Them Before the Frost
By early September the tomato plants stop keeping up, and you are left with a pile of hard green fruit. A good chunk of that pile can still ripen indoors, and the rest can be fried, pickled, or turned into chutney.
