Your First Sourdough Starter: Flour, Water, and a Week of Small Daily Chores
A calm, step-by-step guide to building a sourdough starter from a jar of flour and water, what the daily signs actually mean, and how to keep the starter alive for years.
Sourdough looks intimidating until you see what it really is: a jar of flour and water that you feed twice a day. Within a week or so it starts working for you, and once it is going it can last for years with almost no effort.
This guide covers how to build a starter from scratch, how to tell when it is ready, and how to keep it alive between bakes. It assumes you have a kitchen, a jar, and a few minutes a day. That is all it takes.
What a starter actually is
A sourdough starter is a living culture of wild yeast and friendly bacteria that collect naturally from the flour and the air in your kitchen. Flour is never sterile. Wild organisms live on the grain, and when you mix flour with water and leave it warm, they wake up, multiply, and start producing gas and acidity.
That gas is what leavens sourdough bread. That acidity is what gives it its tang and helps the dough keep. You are not buying anything. You are just giving the organisms already in your flour a home.
The two ingredients you need:
- Flour. Whole grain or rye flour helps the starter get going faster because it carries more nutrients and organisms. Many people start with rye or whole wheat and move to mostly white bread flour after the starter is active.
- Water. Filtered or well water is best. Heavy chlorine in tap water can slow the early days down, so if your tap water is heavily chlorinated, let it sit out a day or use filtered.
You do not need to buy "sourdough." You do not need a special kit. A clean jar, a rubber band or loose lid, and a spoon are the whole tool set.
The first week, day by day
The simplest reliable method is a 50/50 starter by weight: equal parts flour and water. If you do not have a scale, rough measurements work fine in the first week. The starter is forgiving. A scale matters more once you start baking.
Here is a typical path. Timings vary with your kitchen, your flour, and the season, so treat the day numbers as a guide, not a rule. In a warm kitchen in summer it may be ready in five or six days. In a cool kitchen in winter it may take ten to fourteen.
Day 1: the mix
- Mix 50 grams of flour (rye or whole wheat to start) with 50 grams of water into a clean jar.
- It should look like thick, lumpy batter.
- Cover it loosely. A loose lid, a piece of plastic wrap, or a rubber band over the rim all work. The culture needs a little air and it will push out some.
- Leave it somewhere room temperature. A spot around 70 to 75 F is ideal. The top of the refrigerator, a shelf near the stove, or inside an unlit oven with the light on are common warm spots.
Nothing will happen today. That is normal. Do not be alarmed by a quiet jar.
Days 2 to 4: waiting for the show to start
- Feed it twice a day. Once you feed, discard everything except about 50 grams of the old starter, then add 50 grams of fresh flour and 50 grams of water.
- Around day 2 or 3 you should start to smell something. It may smell yeasty, tangy, or a little sour. Mild smells are good signs.
- Small bubbles may appear. Slow is fine. If day 4 comes and the jar is still completely flat and smell-free, keep feeding and keep it a little warmer. Do not throw it out yet.
Days 5 to 7: the doubling window
- Activity should pick up. Bubbles become visible, the surface gets domed and bubbly, and the smell turns pleasantly sour.
- Around day 5 to 7 many starters start to double in size within 4 to 6 hours of a feeding. That doubling, done consistently for a couple of days, is the real "ready" test.
- Some people do a float test: a spoonful that floats in water suggests enough gas for baking. It is a rough check, not a guarantee. The doubling test is the one to trust.
Two things people always ask about in this window:
- Gray or brown liquid on top (called hooch). This means the starter is hungry and a bit acidic. Stir it in, or pour it off and feed fresh. Neither is a failure. If the liquid is pink or orange, throw the starter out and start over.
- A white, fluffy mold. Occasional white mold, especially in cool or humid kitchens, can be wiped off and the starter continued. Any other colored mold (green, black, pink) means start over with a clean jar.
Why you should not taste raw starter
A working starter is safe to bake into bread. The heat kills the concerns. But do not snack on it raw, and do not keep an old, unfed starter around as a treat. Flour can carry small amounts of organisms like salmonella and E. coli in raw form, and an abandoned starter is just a jar of bacteria. Treat raw starter the way you would treat any raw dough. Bake it, or discard it.
Keeping the starter alive between bakes
Once the starter is active, the only real question is how often you will use it. That decides its storage.
- Baking most weeks: keep it at room temperature and feed it once or twice a day. A strong starter likes to be fed near its peak, roughly when it has doubled.
- Baking a couple of times a month: keep it in the refrigerator and feed it once a week. It will slow down and may smell a bit more sour. Pull it out the evening before a bake, feed it at room temperature, and it will usually perk up by morning.
- Away for a while: a starter can be left unfed on the counter for a few days in warm weather and revived, but the cleanest pause is to dehydrate it. Stir it well, spread a thin layer on a baking sheet, dry it fully until it crumbles, and keep the crumbs in a jar. Rehydrate a spoonful in water over a day or two and resume feeding.
A few practical notes on storage:
- A refrigerator starter that has been sitting may wake up grumpy. Give it two or three fresh feedings at room temperature before baking with it, and judge it by the double-or-not test each time.
- Feed with the flour you will actually bake with. If you bake mostly white bread, feed it mostly white bread flour. The culture adapts, and a starter fed all rye will behave differently in a white dough than one fed mostly white.
- Keep the jar out of direct sunlight and away from a hot oven door. Gentle warmth is good. Heat is not.
Your first loaf: keep it simple
Do not aim for a perfect boule on your first bake. Aim for a simple loaf that teaches you how the starter behaves in dough.
A good first recipe shape, by weight:
- 200 grams active starter (at or near its peak)
- 400 grams bread flour
- 300 grams water
- 8 grams salt
The basic sequence: mix the starter, flour, and water and rest it. Knead in the salt and work the dough until it is smooth. Let it rise until it has clearly grown. Shape it, give it a second rest, then bake. Most home ovens handle a simple loaf well at around 450 F for 30 to 35 minutes, dropping to 400 F after the first 15 minutes if the top is darkening too fast.
Expect the first loaf to be lopsided and a little dense. That is the normal path. The second and third loaves improve quickly because you are now learning how your starter peaks, how your dough feels at the right hydration, and how your own oven behaves. The oven is usually the biggest variable, not the starter.
The neighbor angle: share it
A sourdough starter is one of the most shareable things in the kitchen. If yours is doing well, give a jarful to a neighbor. It costs nothing, it takes up no space, and it is the kind of small gift that keeps a kitchen going in the hard months. In fact, the oldest starters in a community often travel from house to house for decades. When you adopt someone else's jar, you have adopted a culture that may be older than you are, and it will adjust to your flour and your counter within a few feedings.
