Water-bath canning is the simplest safe way to preserve high-acid foods in your kitchen. It uses boiling water at 212 degrees Fahrenheit to create an airtight seal inside a jar. The combination of natural acidity and boiling heat keeps bacteria out and food fresh for up to a year. You can make jams, pickles, tomato sauce, and fruit preserves with equipment you probably already own or can buy for less than twenty dollars.
This guide walks you through everything a beginner needs to know: what foods are safe to can this way, what supplies you need, the step-by-step process, the mistakes that ruin jars, and a simple plan for your first batch.
What Water-Bath Canning Is (And What It Is Not)
Water-bath canning means submerging filled jars in a large pot of boiling water for a set amount of time. The boiling water heats the food inside the jar, kills surface microbes, and creates a vacuum seal as the jars cool. The seal is what makes the food safe and shelf-stable.
Water-bath canning is NOT pressure canning. These are two completely different methods that handle different types of food.
Water-bath canning works only for high-acid foods. That means foods that are naturally acidic, like fruits and berries, or foods that have been acidified with vinegar or lemon juice, like pickles and tomatoes. The acidity level is what makes this method safe. Low-acid foods like green beans, corn, potatoes, meats, and soups cannot be safely preserved in a boiling water bath. They require a pressure canner that reaches 240 degrees Fahrenheit, which is hot enough to destroy dangerous bacteria that the boiling water cannot kill.
This distinction matters. Getting it wrong is not a minor mistake. It can make food dangerous to eat. When in doubt, assume the food needs pressure canning and look for a tested pressure-canning recipe.
The Acid Line: What You Can and Cannot Can This Way
The rule is simple. If the food is naturally high in acid or has been acidified with vinegar or lemon juice, it is safe for water-bath canning. If it is not, it requires pressure canning.
Safe for water-bath canning:
- Fruits: berries, peaches, apples, pears, cherries, plums
- Tomatoes: always add lemon juice or citric acid for safe acidity
- Jams, jellies, marmalades, and fruit butters
- Pickled vegetables: pickles, beets, carrots, okra

- Fruit juices
NOT safe for water-bath canning (pressure canning required):
- All meats and poultry
- All seafood

- Most soups and stews
- Chili
- Dairy-based sauces
If a food is not on the safe list above, it needs pressure canning. There is no shortcut.
Supplies You Need
You do not need much to start canning. Some of it is one-time equipment, and most of it is cheap.
Boiling water canner. This is a large, deep pot, usually aluminum, with a fitted lid and a rack that lifts the jars off the bottom. The pot must be deep enough to completely submerge the jars and still have at least one inch of water above them. You can use any large stockpot if it meets these depth and rack requirements. Flat-bottomed pots work on all cooktops.
Canning jars. Mason, Ball, or Kerr jars in pint or quart size are the standard. You can reuse clean, undamaged jars year after year. Do not use ornamental jars, recycled pickle or mayonnaise jars, or old-fashioned wire-bail jars. They are not designed to withstand the heat and pressure of processing.
Lids and bands. Lids are single-use metal discs with an inner gasket that softens during processing to form the seal. You must use new lids every time. Bands are the metal rings that screw onto the jar rim. They can be reused as long as they are clean and not rusted or dented.
Canning funnel. A wide-mouth funnel keeps food off the jar rim when you fill. A food-spotted rim will prevent the lid from sealing properly.
Jar lifter. These are tongs designed to grip the rim of a hot jar and lift it straight up out of boiling water. They are worth the few dollars because lifting a half-gallon of boiling-hot glass with your hands is a recipe for burns and shattered jars.
A large stainless-steel pot. For cooking the food before you fill jars. If you are processing five quarts of tomato sauce, you need a pot big enough to hold it all.
A ladle. A long-handled stainless ladle works well for transferring food into jars.
You can find the canner, jars, lids, and bands at garden centers, farm supply stores, or online. If you are starting out, a basic canning kit with a canner, funnel, jar lifter, and a dozen lids and bands will get you through your first batch.
The Step-by-Step Process
Follow these steps every time you water-bath can. Consistency is what keeps your jars safe and sealed.
One. Gather your supplies. Check that the pot is big enough for the number of jars you plan to process. Inspect the jars for cracks or chips. Verify that the bands are clean. Open the package of new lids.
Two. Wash everything. Wash jars, bands, and lids in hot soapy water. Rinse thoroughly. Keep the lids warm but not boiling. Do not boil the lids. The heat from the processing water will activate the gasket. Boiling them beforehand can damage the seal.
Three. Prepare the food. Cook your fruit, tomatoes, or vegetables according to a tested recipe. Tested recipes are important because they have been validated for safe processing times and acidity levels. Do not improvise the acid-to-food ratio in a pickle or salsa recipe. Small changes to the acid content can make the food unsafe.
Four. Keep the jars warm. Place the washed jars in a large pot of hot water on the stove or in a dishwasher on the warm setting. Hot jars are less likely to crack when you fill them with hot food.
Five. Pack the jars. Using your funnel, ladle the hot food into the warm jars. Leave the correct headspace at the top of the jar. This varies by recipe, but two inches is standard for most high-acid foods. Headspace is the empty space between the food and the rim of the jar. Too little headspace and the food can spill onto the rim during processing, preventing a seal. Too much headspace and you risk inadequate processing.

Seven. Wipe the rims. Use a clean, damp cloth to wipe the rim of each jar. Any food residue on the rim will prevent the lid from sealing. This is the step that most jar failures trace back to.
Eight. Apply the lid and band. Center the lid on the jar. Screw the band on until it is fingertip-tight. Do not overtighten. The band should be snug but you should still be able to rotate it with light finger pressure. Overtightening prevents air from escaping during processing, which can cause the lid to bulge or the jar to break.
Nine. Process in the water bath. Lower the filled jars into the canner using the jar lifter. The jars should sit on the rack, not directly on the pot bottom. Add enough boiling water to cover the jars by at least one inch. Place the lid on the canner, bring to a rolling boil, and start your timer. Processing time depends on the food, jar size, and altitude. Standard processing times range from five to twenty-five minutes.
Ten. Cool and check. When processing is done, turn off the heat and remove the canner lid. Let the jars sit in the canner for five minutes, then remove them and place them on a towel-lined surface away from drafts. Do not touch or tighten the bands while the jars are cooling. Leave them undisturbed for twelve to twenty-four hours while they cool and seal.
Eleven. Check the seals. After the jars have cooled, press the center of each lid. A properly sealed lid will not move. If a lid flexes or pops when you press it, the jar did not seal. Eat the contents within a few days, or refrigerate and reprocess using a tested recipe.
Twelve. Label and store. Remove the bands from sealed jars. Wash the jars, label them with the food name and date, and store them in a cool, dark place. Properly processed high-acid foods will keep for up to a year. Use them within twelve months for best quality.
Common Mistakes and How to Avoid Them
Skipping tested recipes. This is the single most important safety rule. Use only recipes from reputable sources like the USDA Complete Guide to Home Canning, the National Center for Home Food Preservation, or a trusted extension service. Do not modify the acid-to-food ratios. Do not substitute ingredients and expect the same processing time. The numbers in a canning recipe exist for a reason.
Using the wrong jars. Never can in ornamental jars, recycled food jars, or vintage wire-bail jars. Only use jars labeled for canning. They are designed to withstand the thermal stress of processing. Regular glass jars will crack.
Overtightening the bands. Fingertip-tight is the target. A band that is cranked down tight will prevent steam from escaping during processing. This can cause lids to bulge, jars to leak, or jars to break. You want steam to escape freely so the vacuum forms as the jar cools.
Ignoring altitude adjustments. Processing times change with elevation. At higher altitudes, water boils at a lower temperature, so you need longer processing times. The difference starts at about 1,000 feet above sea level and becomes more significant the higher you go. At 3,000 feet, you typically add five minutes. At 6,000 feet, you add ten minutes. Adjust your processing time based on your elevation.
Rushing the cooling phase. Do not remove the jars from the canner immediately after processing. Do not tighten the bands while hot. Do not place hot jars on a cold surface or in a drafty spot. Let them cool undisturbed for twelve to twenty-four hours. The seal forms during cooling, and rushing it invites failure.
Storing jars with the bands on. Once the jars are fully cooled and sealed, remove the bands. Storing bands on the jars traps moisture that leads to rust, and if a seal fails, the band holds the lid in place, giving a false sense of security. Store the jars without bands and check the seal before each use.
Your First Canning Batch
Pick one simple food for your first attempt. Tomato sauce with added lemon juice is a reliable choice because it is forgiving, the flavors are familiar, and it makes a useful product you can eat all year.
Here is a straightforward plan:
Buy or harvest five pounds of ripe tomatoes. Wash and core them. Cut them into quarters. Place them in a large pot with a cup of water. Simmer for ten to fifteen minutes until soft.
Process the tomatoes. Run them through a food mill to remove skins and seeds. Return the smooth pulp to the pot. Heat it through.
Add acid. For every quart of tomato juice or sauce, add two tablespoons of bottled lemon juice or one-quarter teaspoon of citric acid. For pint jars, add one tablespoon of lemon juice or one-eighth teaspoon of citric acid. This step is non-negotiable. Tomatoes are borderline in acidity, and the added acid brings them into the safe range for water-bath canning.

Check stored jars periodically. Look for signs of spoilage before you open a jar:
- A lid that is dented, bulging, or pops when pressed
- Cloudy liquid or bubbles rising in an unopened jar
