There is a quiet kind of independence that comes from opening a paper envelope in late winter and finding seeds inside that grew from your own garden last fall. It feels like opening a letter your future self wrote.

Most home gardeners buy seed every year without thinking much about it. The packets are cheap. The selection is wide. But the seeds inside those packets started somewhere, and for thousands of years people saved seed from their own plants long before seed companies existed. It is a simple skill. It saves money. It keeps you from being locked into whatever a catalog decides to offer. And it lets you select for the traits you actually care about: disease resistance, flavor, performance in your soil.

This guide is for beginners. It covers the two seed saving methods, which vegetables use which method, how to handle pollination so your seed stays true to type, and how to store it so it still grows next spring. No fancy equipment. No special facility. Just the seeds you grew and a few supplies you probably already have.

Two Methods, Six Crops

Seed saving boils down to two methods. Dry and wet. Dry saving works with crops that produce seeds inside a dried pod or head. You let the seed dry on the plant, harvest it, and thresh it out. Wet saving works with crops that produce seeds inside a fleshy fruit. You extract the seeds, ferment them to remove a germination-inhibiting coating, wash them, and dry them.

If you are starting with one or two crops, pick a dry process crop. Beans are the easiest. They require almost no technique. Tomatoes, the most common wet process crop, take about a week of waiting for fermentation but are equally straightforward once you understand the steps.

Dry Process: Beans, Peas, Lettuce, Peppers, Onions

These crops self-pollinate, meaning the flower pollinates itself before it even opens. That makes them the safest first crops because cross-pollination is extremely unlikely. You do not need to worry about distance from other varieties.

Beans. Let the beans stay on the vine until the pods turn brown, dry, and rattle when you shake them. Pick the driest pods you can find. Shell them into a bowl. Check that the seeds are completely hard and dry. If you bend a seed and it snaps cleanly instead of flexing, it is dry enough. Store in a paper envelope or a glass jar.

Lettuce. Let the lettuce bolt and go to seed. Cut the tall flower stalks when most of the seed heads have turned brown but before they shatter and drop to the ground. Place the cut heads upside down in a paper bag and hang them in a dry, airy space. After a few days the seeds will fall into the bag. Rub the heads gently between your hands to release the seeds. Sift through a colander or a fine mesh to remove the chaff.

Peppers. Let the peppers ripen fully on the plant until they reach their final color and start to soften or wrinkle. Cut them open, scrape the seeds out, spread them on a coffee filter or paper plate, and let them air dry in a well-ventilated space for a week or two. Do not store them while they are still damp.

Onions. Let the onion bulbs mature fully, then allow the seed stalks to grow tall and dry in place. The small black seeds form in round seed heads. Cut the heads when most are brown. Place them in a paper bag and crush them between your hands. The seeds fall out. Sift away the husks.

Wet Process: Tomatoes, Cucumbers, Squash, Melons

These crops also self-pollinate, so cross-pollination is not a major concern for home gardeners growing one or two varieties. The wet process is different because the seeds are surrounded by a gel coating that contains compounds which inhibit germination. Fermentation breaks down that coating.

Tomatoes. Cut a ripe, fully mature tomato in half. Scoop the seeds and their gel into a small jar. Add a splash of water. Cover the jar with a coffee filter or breathable cloth and let it sit at room temperature for three to five days. You will see mold form on the surface. That is good. The fermentation is working. Stir once a day. When you see distinct seeds sinking to the bottom and a thick mold layer on top, pour off the mold and floating material with water. Repeat until the water runs clear. Spread the clean seeds on a coffee filter or ceramic plate and let them dry completely, about one to two weeks. Seeds stuck to a coffee filter are fine. Just peel them off once dry.

Cucumbers and squash. Use overripe fruit. A harvesting cucumber is underripe. For seed saving, you want a cucumber or squash that has stayed on the vine past its eating stage until the skin hardens and the color changes. Cut it open, scoop out the seeds and gel, ferment in a jar with a little water for three to five days, then wash and dry as with tomatoes. Squash seeds are large enough that you can pick them out individually after fermentation and dry them on a plate without fermenting, but fermentation still removes the gel coating properly.

Melons. Same process as tomatoes. Scoop the seeds, ferment, wash, dry.

A Note on Cross-Pollination

Cross-pollination only matters if you want your saved seeds to grow into the same variety you saved them from. A cross between two varieties of the same species will not kill the plant. The seeds will still grow. But the resulting plant may have unexpected traits. A red bell pepper crossed with a yellow bell pepper will not give you red and yellow peppers. It may give you orange, or brown, or something else entirely. The seed from that plant is no longer true to either parent.

For most home gardeners, cross-pollination is manageable because the easiest crops to save seed from are self-pollinators. Beans, tomatoes, peppers, peas, lettuce, and eggplants rarely cross because each flower pollinates itself before opening. You can grow multiple varieties of these right next to each other without worry.

Wind-pollinated crops like onions and corn do cross, but they are less commonly saved by beginners. Insect-pollinated crops like squash and cucumbers can cross if you grow multiple varieties within about a half mile. If you are growing just two varieties of zucchini, the odds of significant crossing are low, but if seed purity matters to you, separate varieties by at least a quarter mile or plant them at different times so they flower at different windows.

The practical advice for beginners: start with beans or tomatoes. Avoid cross-pollination worries entirely until you are comfortable with the basic process.

How Long Seeds Last

Seed viability depends on the crop and the storage conditions. Properly dried and stored seed stays alive for varying lengths of time. These ranges come from extension service data and seed saving reference guides.

  • Tomatoes: 4 to 10 years
  • Peppers: 2 to 5 years
  • Beans: 2 to 4 years
  • Lettuce: 3 to 5 years
  • Peas: 2 to 4 years
  • Squash: 3 to 8 years
  • Carrots: 2 to 3 years
  • Onions: 1 to 2 years
  • Spinach: 1 to 2 years

The storage conditions matter enormously. Heat and moisture kill seed viability faster than anything else. Store seed in a cool, dry, dark place. A sealed glass jar in a cupboard is fine. A basement works if it stays dry. A garage that gets hot in summer and damp in winter is not ideal. Fridge storage works if the seed is sealed against moisture, but do not store seed in the fridge in a regular paper envelope. Moisture from the fridge will get inside. If you refrigerate, put the envelope inside a sealed bag with a desiccant pack.

A simple germination test before planting tells you whether your stored seed is still alive. Spread ten seeds on a damp paper towel, fold the towel over them, keep it damp, and check after a week. If seven or more have sprouted, your germination rate is acceptable for garden planting. Below five out of ten, the seed is borderline. Below three, replace it.

How to Label

A paper envelope with a handwritten date and variety name is all you need. Write the full variety name, not just "tomato." "Brandywine" is not enough. "Brandywine, 2025" is better. If you saved seed from a hybrid variety, label it as a hybrid and note that the next generation will not be true to type. Hybrids are F1 crosses. Saving seed from a hybrid produces unpredictable results. Only save seed from open-pollinated or heirloom varieties if you want the next plant to match the parent.

A Simple Season-by-Season Plan

Here is how seed saving fits into a garden calendar for Zone 7a.

May through June: Plant your seed-saving crops early enough so the seeds have time to mature. Beans planted in late June can produce dry seed by September. Tomatoes planted in May can produce ripe fruit for seed by August.

July through September: Harvest vegetables for eating. Set aside separate plants for seed. Mark them with a flag or a stake so you know which ones to let go to full maturity. Do not eat the seed-saving plants. They need to stay on the vine or stalk until fully dry.

September through October: Harvest and process seed. Beans and dry peppers go directly to storage. Lettuce seed comes in when stalks brown, usually late August or September. Tomatoes come from late-season fruit that you intentionally leave until fully ripe.

November through March: Store seed. Check your labels. Run a germination test in late winter for any seed you are unsure about. Order replacements for anything that fails.

March: Start seeds indoors with your saved seed, or plant it directly outside after the last frost for warm-season crops like beans, peppers, squash, and melons.

What Not to Save

Hybrid seeds do not produce true-to-type plants. If the packet says F1 or hybrid, do not save seed from it expecting the same variety next year. It will produce something different. You can still save the seed and it will grow, but the plant will not match the parent.

Open-pollinated varieties, heirloom varieties, and landrace populations are the ones that breed true. They are what seed saving is for. If you do not know whether your variety is open-pollinated, look at the seed packet. Most commercial seed companies specify this. If you bought seeds from a neighbor or a seed swap, assume they are open-pollinated and try saving a small batch first.

Common Mistakes

Harvesting seed too early. If the pod or head is not fully dry, the seed inside will not be fully dry either. Storing damp seed causes mold. When in doubt, let it dry longer. A seed that is fully mature will be hard, not soft, and will not bend.

Storing seed before it is completely dry. Dried to the touch is not the same as completely dry. A bean that feels dry on the outside can still hold moisture inside. Let beans sit in a single layer on a plate for an extra week before sealing them in a jar. Tomatoes and squash seeds should stay on the coffee filter or plate until they are completely crisp and no longer feel cool or damp when you touch them.

Sealing in an airtight container while still slightly damp. This causes condensation inside the container and mold on the seeds. Seeds must be fully dry before sealing. A good rule: if it takes up to two weeks to dry after fermentation, it is not done until two weeks.

Forgetting the year on the label. You will think you know which seed is which until March of the following year and realize you have no idea. Label every envelope with the variety and the year.

Expecting perfection on the first try. Seed saving is a practical skill. Your first batch of tomato seed may not be as clean as you want. Your bean seed may have a few shriveled ones mixed in. That is normal. Sift more carefully next year. The goal is viable seed, not museum-quality seed.

Why Seed Saving Matters

Seed saving is a small act that connects you to a long line of gardeners who went before you. It reduces your dependency on the global seed supply. It lets you save money year after year. You can start by saving one or two crops and work up from there. A packet of bean seed from the store costs a few dollars. A pound of saved bean seed produces more beans than you can eat in a season, and the seed from that harvest seeds the next one for free.

It also lets you build seed that is adapted to your own garden. Plants pass down useful information to their seeds. Seeds from plants that survived your soil, your rainfall pattern, and your local pests are already tuned to your conditions. Next year's crop starts with an advantage because the plants that produced the seed already proved they could handle your environment.

That is seed saving. Grow a plant. Let it seed. Harvest. Dry. Label. Store. Plant next spring. The cycle starts over.
