Root cellaring is not complicated. It does not require a dug-out basement or a stone vault. It requires a cool space, somewhere between thirty-two and forty degrees Fahrenheit, and a way to keep humidity between eighty-five and ninety-five percent. Those are easy conditions to meet if you know what you are doing. They are hard to meet if you guess.

- Winter squash - Fifty to fifty-five degrees, 50-70% humidity. Winter squash actually prefers drier storage than root vegetables. A cool garage or basement works well. Do not store squash next to apples or onions. They share ethylene gas and it shortens shelf life.
- Onions - Thirty-five to fifty degrees, 65-70% humidity. Onions need the driest storage of any cellar crop. Humidity above seventy percent causes them to sprout or rot. Hang them in braids or store them in mesh bags in a dry corner.
- Garlic - Thirty to fifty degrees, 60-70% humidity. Like onions, garlic prefers dry conditions. Store whole bulbs. Pickled garlic is a different matter and goes in the refrigerator.
Vegetables that do not belong in a root cellar:
Tomatoes, peppers, cucumbers, and green beans do not store well in any cold cellaring system. They are tropical or subtropical in origin and chill damage begins well above freezing. Those vegetables are better preserved by canning, drying, or fermenting.
Corn stores poorly after the initial harvest. Dried field corn stores for a year or more, but sweet corn needs to be processed within days of picking. Neither belongs in a root cellar unless you are making dried cornmeal.
Building or Adapting Your Storage Space
You do not need to dig a hole in the ground to have a root cellar. But you do need to understand what a proper root cellar provides, because adapting an existing space means replicating those conditions.
Underground or Semi-Underground
