They produce heavily per square foot. A four-foot by ten-foot bed of potatoes, managed carefully, can yield twenty to forty pounds of tubers. That is enough to feed a family of four for several months if potatoes make up a regular part of the dinner table. For comparison, that same bed of tomatoes might give you fifteen to twenty pounds, spread over a much longer season.
They fill the garden calendar. Potatoes are planted in early spring, right around the time the soil becomes workable. They grow through May and June, producing harvestable tubers by July or August, and then clear the bed for fall planting. That leaves you with a productive spring crop and a free, well-worked bed for the fall.

Choosing Varieties for Zone 7a
Potato varieties fall into three groups based on days to maturity, which tells you how long from planting to harvest. This matters more than most people realize in Zone 7a, because potatoes are cool-season crops that stop forming tubers when soil temperatures climb above eighty-five degrees in July. If you plant a late variety and it is still maturing during the heat of July, your crop will stall. You will pull up a few undersized potatoes and wonder where the rest went.
Early Varieties (70 to 90 Days)
Early varieties mature quickly, which means they are ready before the worst of the summer heat arrives. They are the safest choice in Zone 7a if you are growing potatoes for the first time. They usually produce smaller tubers than later varieties, but the yield per plant is still impressive, and you get them out of the ground while the weather is still manageable.
Katahdin
A white, round-to-oval variety that matures in about seventy-five days. Reliable, disease-resistant, and good for eating in any style. One of the most consistently productive early varieties for home gardens. Tubers keep well into storage, which is unusual for an early variety.
Red Norland
A red-skinned, round variety that matures in about ninety days. Slightly later than Katahdin but still well before peak summer heat. Excellent flavor, waxy texture that holds its shape well when boiled. One of the most widely planted red varieties for home gardens. Stores reasonably well, though not quite as long as white varieties.
Cherry Red
A small, red-skinned variety that matures in about eighty-five days. Produces lots of small, uniform red potatoes that are ideal for roasting whole or in potato salads. The skin stays thin and delicate, so these are great for fresh eating right after harvest, though you will need to cure them properly for storage.
Mid-Season Varieties (90 to 100 Days)
Mid-season varieties push into the warm weather of July before maturing. They can work in Zone 7a if you plant them early enough in spring, but they carry a slightly higher risk of heat-related stall compared to early varieties. Plan for a spring planting in late March or very early April if you want mid-season types.
Yukon Gold
A yellow-fleshed variety that matures in about ninety to one hundred days. Perhaps the most popular home garden potato for good reason. The flavor is rich, buttery, and complex. Excellent for roasting, mashing, and baking. Medium-sized, oval tubers with smooth yellow skin. One of the better all-purpose potatoes available. Stores well, typically four to five months under proper conditions.
Kennebec
A white, oblong variety that matures in about one hundred days. A commercial favorite that works well in home gardens. Uniform, attractive tubers with good flavor. Strong resistance to common scab, which is a significant advantage in Zone 7a. Stores well for six months or more. One of the better choices for gardeners who want both flavor and storage life.
Norland (late-maturing selection)
The same genetics as Red Norland but planted late enough that it takes the full ninety days. Slightly larger tubers than the early-harvested Red Norland. Good all-purpose variety with the same red skin and waxy texture.
Late Varieties (100 to 130 Days)
Late varieties are the riskiest in Zone 7a. They take so long to mature that they push deep into the heat of July and August, which is when tuber formation slows and often stops entirely. They can work if you have a mild summer and an early spring planting, but first-time growers in Zone 7a should probably start with early or mid-season varieties before attempting late types.
Russet Burbank
The classic baking potato. Long, brown-skinned, white-fleshed tubers with a fluffy texture ideal for baking. Takes about one hundred twenty to one hundred thirty days. Difficult to get full-size tubers in Zone 7a because the heat cuts the season short. Worth trying if you want to bake your own potatoes, but do not expect supermarket-sized results from a home garden.
What to Start With
If you are new to growing potatoes, start with these two:
- Katahdin for early harvest and reliability
- Yukon Gold for flavor and versatility
Plant one hundred pounds of seed pieces across two varieties. That should fill a four-foot by ten-foot bed with enough potatoes for a family of four to eat regularly through the fall and into winter.
Preparing Seed Pieces
Potatoes are planted from seed pieces, which are chunks of certified seed potatoes with eyes that will sprout into new plants. You cannot grow potatoes from the tubers you buy at the grocery store. They are treated with sprout inhibitors to keep them from sprouting on the shelf, and they may carry diseases not present in certified seed stock.
Buying Seed Potatoes
Purchase certified seed potatoes from a nursery, garden center, or mail-order seed company. Look for disease-free stock labeled for your zone. Order early, as good varieties sell out by late winter. Certified seed potatoes cost more than grocery store potatoes, but the difference is small for the amount of seed you need.
A home garden bed four feet by ten feet requires roughly twenty-five to thirty pounds of seed potatoes. At typical seed potato prices, this runs about thirty to sixty dollars for the whole bed.
Cutting the Seed Pieces
Large seed potatoes should be cut into smaller pieces before planting. Each piece should weigh about two to three ounces, which is roughly the size of a small egg or a large plum.
Each seed piece must have two to three healthy eyes (the small bumps on the potato surface where sprouts emerge). If a potato is large enough to produce four or more pieces with eyes, cut it into as many pieces as needed. If it is small enough to plant whole, leave it whole. Do not cut small seed potatoes, as this wastes planting stock without increasing your yield.
Use a clean, sharp knife. Sterilize the blade between potatoes with rubbing alcohol to avoid spreading disease from one potato to another. This is especially important if you are cutting multiple varieties or potatoes from a batch you have opened.
Curing the Cut Surfaces
After cutting, do not plant the seed pieces immediately. Lay them on a sheet of newspaper or cardboard in a cool, dry, well-ventilated space for two to three days. This allows the cut surfaces to dry and form a callus, which reduces the risk of rot when the pieces are planted in soil.
Do not let the seed pieces dry out completely or sit for more than five days. You want the cuts to callus, not the potato to shrivel.
Chitting (Optional)
Chitting is the practice of placing seed pieces in a bright, cool spot (forty to fifty-five degrees Fahrenheit) for one to two weeks before planting, so the eyes sprout into short, thick, green shoots before they go into the ground. This gives the plants an early start and can be useful in years with short springs.
Chitting is not required, but it does result in faster emergence and slightly earlier harvests. If you are planting early in the season and want to get a head start, chitting is worth doing. If you are planting later or prefer simplicity, skip it. Potatoes will sprout fine without chitting.
Planting
Potatoes are planted in early spring, typically two to four weeks before the last expected frost date. In Zone 7a, this is usually late March to early April. The key indicator is soil temperature, not calendar date. Plant when the soil has reached forty-five to fifty degrees Fahrenheit. If you can dig a handful of soil at planting depth and it feels cool but not cold, the timing is about right.
Choosing a Site
Potatoes need full sun, at least eight hours per day. They grow best in loose, well-drained soil with a pH between fifty and sixty-five. A pH near fifty-five is ideal, as it helps suppress common scab, a fungal disease that causes rough, corky patches on potato skin. If your soil pH is higher than sixty-five, consider adding elemental sulfur the fall before planting to bring it down.
Potatoes do not grow well in heavy clay or rocky soil. The tubers need loose, forgiving soil to expand. If your native soil is compacted or clay-heavy, raised beds or deep container planting is the practical approach. A raised bed filled with loose, amended soil produces significantly better potatoes than planting directly into compacted ground.
How to Plant
Dig trenches. Dig trenches about four to six inches deep, spaced thirty to thirty-six inches apart. The spacing gives the plants room to hill up without crowding, and the width lets you work between rows without compacting the soil.
Place the seed pieces. Lay the seed pieces in the trench, eyes facing up, about twelve to fifteen inches apart within the row. Do not plant them deeper than six inches at this stage. You will add soil as the plants grow.
Cover lightly. Cover the seed pieces with about three to four inches of soil. Do not fill the trench yet. You will add more soil in stages as the plants grow, a process called hilling.
Water gently. Water the planted rows lightly to settle the soil. Do not soak them deeply at this stage, as the seed pieces have enough moisture stored in them to get through the first week. Excessive moisture at planting time can cause the seed pieces to rot before they sprout.
Succession Planting
You can extend your harvest by planting seed pieces in three separate batches, two to three weeks apart. Early batches are ready in July. Middle batches are ready in August. Late batches are ready in September, before the autumn chill arrives. Each batch is planted and hilled the same way, just staggered in time. This approach gives you fresh potatoes over several months instead of one big harvest.
Hilling
Hilling is the single most important cultivation practice for potatoes. It covers the lower stems with soil, which encourages the plant to produce more tubers along the buried stem. A well-hilled potato plant can produce two to three times more tubers than an un-hilled plant. It also prevents tubers from turning green from exposure to sunlight.
How to Hill
First hill: When the potato shoots have grown about six inches tall, mound soil up around the stems, leaving the top four to six inches of foliage exposed. You can pull soil from between the rows and push it up against the stems, or add compost and loose topsoil to build the mound. The goal is to bury most of the stem below the soil surface while leaving the leafy top exposed.
Second hill: When the plants have grown another six to eight inches, repeat the process. Add more soil, mound higher, and again leave the top foliage exposed. For large varieties or heavy-producing beds, a third hilling about two weeks later is worth doing.
How high to hill: By the end of the season, the soil mound around each potato plant should be six to twelve inches high. Do not bury the plant completely. The top foliage must always be above the soil to continue photosynthesis. If you bury the plant too deeply and cover all the leaves, you will stop the plant from growing and reduce your yield.
When Not to Hill
Do not hill potatoes in waterlogged soil. If the ground is soggy from spring rains, wait until it drains and dries a bit before mounding. Hilling wet soil creates a compacted layer that restricts air flow to the developing tubers and can invite rot.
Seasonal Care
Once the plants are up and hilled, potato care is mostly straightforward. A few consistent practices keep the crop healthy and productive.
Watering
Potatoes need consistent moisture, especially during tuber formation, which begins about two weeks after the plants flower. Inconsistent watering causes irregular growth, cracked tubers, and increased susceptibility to disease.
Provide about one to one and a half inches of water per week, including rainfall. During hot or dry periods in June and July, increase to two inches. Water at the base of the plants, not overhead. Wet foliage invites blight and other fungal diseases.
Mulch around the base of the plants with straw, shredded leaves, or grass clippings to retain moisture and keep the soil cool. Mulch is especially important in Zone 7a, where summer temperatures regularly climb above eighty-five degrees. Cool soil keeps the plants forming tubers longer.
Fertilizing
Potatoes are moderate feeders. They benefit from a soil that is rich in organic matter but do not need heavy nitrogen fertilization. In fact, excess nitrogen produces lush green foliage and sparse tubers.
At planting time, work well-aged compost or aged manure into the soil. About two inches of compost worked into the top six inches of soil before trenching is plenty.
Mid-season, if the foliage looks pale or the plants are stunted, a light application of balanced organic fertilizer can help. Do not exceed this. Most garden soils have enough nutrients for a single potato crop if they were amended well at planting.
Avoid fresh manure, which is too high in nitrogen and can increase scab severity. Avoid fertilizers high in calcium or potassium, as these also promote scab.
Weeding
Weed carefully in the early stages before the plant canopy closes. Use a shallow hoe or hand-pull weeds, being careful not to disturb the shallow potato roots. Once the potato leaves form a dense canopy, weeds become much easier to control because the shade suppresses weed growth.
Do not try to weed by digging deeply around potato plants. The roots spread close to the surface, and deep weeding can damage or sever them.
Common Problems
Potatoes face a predictable set of pests and diseases. Knowing what to look for helps you manage them before they become crop-killers.
Colorado Potato Beetle
The Colorado potato beetle is the most common insect pest of homegrown potatoes. The adult beetles are about half an inch long, yellow-orange with black stripes. The larvae are bright red with two rows of black spots along each side of their bodies. Both stages feed voraciously on potato foliage and can strip a plant bare in days if left unchecked.
Prevention and management:
- Hand-pick beetles and eggs. This is the most effective method for small garden beds. Shake the plants over a bucket of soapy water and drop the beetles and eggs in. Check the undersides of leaves for clusters of orange eggs.
- Use row covers. Place fine mesh row covers over the plants at planting time. Remove them when the plants begin flowering, as beetles often arrive at that stage.
- Rotate crop location. Never plant potatoes in the same spot two years in a row. The beetles overwinter in the soil near established potato beds.
- Neem oil can suppress light infestations but is rarely effective against heavy outbreaks.
Common Scab
Common scab is a fungal disease that causes rough, corky, brown patches on the surface of potato tubers. The tubers are still safe to eat, but the scab makes them unsightly and reduces their storage life. Common scab is most severe in soils with a pH above five and a half, in dry conditions, and in soils amended with manure or lime.
Prevention:
- Keep soil pH at fifty-two to five and a half. Elemental sulfur is the most reliable amendment for lowering pH.
- Maintain consistent soil moisture. Scab is worse in dry conditions.
- Avoid manure and lime near potato beds.
- Rotate potatoes with non-susceptible crops for at least two years between plantings.
- Choose scab-resistant varieties like Kennebec or Katahdin.
Late Blight
Late blight is a serious disease that can destroy an entire potato crop in a matter of days. It appears as dark, water-soaked lesions on leaves and stems, often with a white fuzzy mold on the undersides. Tubers develop dark, firm rot that spreads quickly after harvest.
Late blight thrives in cool, wet weather and spreads rapidly in humid conditions. If you see symptoms, remove and destroy affected plants immediately. Do not compost them. Late blight spores survive the winter in infected plant material.
Prevention is through good airflow, avoiding overhead watering, and removing infected foliage quickly. Copper-based sprays can help reduce early infections but do not cure established blight.
Green Potatoes and Solanine
When potato tubers are exposed to sunlight, they turn green and produce solanine, a natural toxin that is bitter and can cause nausea, headaches, and digestive distress in large quantities. Green skin is an indicator of solanine presence.
Prevention:
- Hill properly to keep soil covering the tubers.
- Inspect harvested potatoes and discard any with significant green patches.
- If only a small area is green, cut it away generously before cooking.
- Never eat sprouts. Sprouts are also high in solanine and should be removed and discarded.
Harvesting
Potatoes are ready to harvest when the foliage begins to yellow and dry from the bottom up. This usually happens between seventy and one hundred ten days after planting, depending on the variety.
New Potatoes
You can dig new potatoes as early as four to six weeks after the plants flower. These are small, thin-skinned, and especially tender. They do not store well and should be eaten within a few days of harvest. New potato diggings are a seasonal treat that many gardeners look forward to.
Mature Harvest
For storage potatoes, wait until the foliage has mostly died back. Gently dig around the base of the plant with a garden fork, being careful not to pierce tubers with the tines. Lift the soil and pull the tubers out by hand. Shake off excess soil and inspect the harvest.
Do not wash potatoes before storage. The soil on the skins acts as a protective barrier against drying and rot. Wash them only when you are ready to cook them.
Checking for Maturity
If the foliage has not completely died back but you suspect the tubers are mature, dig up one or two plants as a test. Rub a finger gently across the skin of a tuber. If the skin rubs off easily, the potatoes are immature and will not store well. If the skin is firm and does not rub off easily, the potatoes are mature and ready for harvest.
Curing and Storing
Curing is the step that makes the difference between potatoes that last three months and potatoes that rot in four weeks. It is not optional if you want long-term storage, and it is one of the steps most beginners skip.
Curing
After digging, lay the potatoes in a single layer in a cool, dark, well-ventilated space for ten to fourteen days. The ideal curing temperature is fifty to sixty degrees Fahrenheit with high humidity (around ninety percent). A garage, basement, or covered porch works well if the temperature stays in the right range.
Curing allows the skins to thicken and any minor cuts or bruises to heal. The process turns the thin, fragile skin of a freshly dug potato into a tougher layer that resists moisture loss and bacterial entry during storage.
Do not cure potatoes in direct sunlight. They will turn green and develop solanine. Do not cure them in a warm space above seventy degrees, as they may start to sprout or rot.
Storing
After curing, move the potatoes to a storage space that stays cool and dark. The ideal temperature is thirty-eight to forty degrees Fahrenheit. At this temperature, potatoes will not freeze, but they also will not sprout or deteriorate quickly. Storage at forty-five degrees or above causes sprouting and sugar conversion. Storage at thirty-five degrees or below causes the starch to convert to sugar, which makes the potatoes sweet and causes them to burn when baked or fried.
Ideal storage conditions:
- Temperature: thirty-eight to forty degrees Fahrenheit
- Humidity: ninety to ninety-five percent
- Light: complete darkness
- Ventilation: good air circulation
- Separation: keep potatoes away from apples and pears, which release ethylene gas that encourages sprouting
Potatoes stored under these conditions will keep for three to six months, depending on the variety. Late varieties like Kennebec and Russet Burbank generally store longer than early types.
Check stored potatoes periodically and remove any that show signs of rot. One bad potato can infect its neighbors if you leave it in the pile.
Getting Started
Here is a simple plan for a family of four:
- Order seed potatoes in February. Choose Katahdin and Yukon Gold. One hundred pounds across both varieties.
- Cut and cure seed pieces in late March. Two to three days to callus the cuts.
- Plant in late March or early April. Soil at forty-five to fifty degrees Fahrenheit. Trenches six inches deep, spaced three feet apart.
