You do not need a glass cathedral or a six-figure solar investment to grow food through winter. A small hoop house, a basic polycarbonate panel kit, or even a repurposed cold frame can keep leafy greens alive, herbs growing, and a few other hardy crops producing when the rest of the garden is frozen solid.

What a Home Greenhouse Actually Is

You do not need heating equipment to run a greenhouse through much of the year. The sun provides the heat. Your job is to manage what happens with that heat.
The most common cover materials for small home greenhouses are:
- Single-layer polyethylene film — inexpensive, lightweight, lasts one to three seasons
- Double-layer polyethylene inflated as a cushion — more insulation, lasts two to five seasons
- Polycarbonate panels — more expensive, durable, good insulation, lasts five to ten years

For a first greenhouse, single-layer poly or double-layer poly are the most honest choices. They work. They are affordable. They will need replacing eventually. That is a feature, not a flaw, because old plastic does not transmit light as well as new plastic, and swapping it out is a simple seasonal chore.
Choosing a Spot and Setting It Up
The single biggest factor in greenhouse success is placement. Most beginners pick a spot that looks nice and then struggle because the greenhouse is in shade for half the day.
Your greenhouse should face south if possible, or at least south-west. It needs maximum sun exposure during winter months when the sun sits low on the horizon and daylight hours are short. A south-facing slope helps even more.
Consider wind. A greenhouse on an exposed ridge will lose heat fast and may take damage in a storm. A sheltered spot near a fence or a shed reduces heat loss and protects the structure from high winds.
Do not place a greenhouse under trees that drop leaves or pine needles. Cleaning leaves out of plastic covering is a chore you will not enjoy in November.
Once you have chosen a spot, you will want a flat surface. A gravel pad or compacted crushed stone works well. It drains water, keeps the structure level, and prevents weeds from creeping under the plastic. A wooden frame border can help hold the gravel in place.

Spring (March to May in Zone 7a)
Spring is the greenhouse's easiest season. Temperatures rise on their own. You can start seeds early and transplant seedlings ahead of the outdoor garden.
Good spring greenhouse crops include:
- Tomatoes (indeterminate varieties for continuous harvest)
- Cucumbers
- Peppers
- Basil and other warm-weather herbs
- Early lettuce varieties
- Swiss chard
- Early beans
The advantage of a greenhouse in spring is that you get a head start of three to six weeks over the open garden. You can plant heat-loving crops like tomatoes before the last frost date, sometimes weeks before your neighbors.
Summer (June to August)
Summer in a greenhouse requires ventilation. A closed greenhouse on a hot July afternoon can cook plants inside if you do not manage the air flow. You will need roof vents, side vents, or a fan to keep temperatures from climbing above 85 to 90 degrees Fahrenheit.
Summer greenhouse crops:
- Continuing tomato and pepper harvests
- Bush beans
- Summer squash (with enough spacing)
- Heat-tolerant herbs like basil
- Trail tomatoes or cucumbers on trellises to free floor space
The summer greenhouse is really a summer extension greenhouse. It keeps producing when the open garden gets too hot or too dry. Many gardeners shift to a shade cloth during peak summer heat rather than fighting the temperature with ventilation alone.
Fall (September to November)
Fall is often the best greenhouse season for beginners. The air cools, ventilation needs decrease, and cool-loving crops thrive. A greenhouse can extend the fall harvest by one to two months, sometimes longer.
Fall crops:
- Kale

- Lettuce (succession planted)
- Radishes
- Peas
- Carrots
- Herbs (parsley, cilantro, chives)
You can sow fall crops directly into the greenhouse soil and harvest them through November or even into December in Zone 7a.
Winter (December to February)
Winter greenhouse growing is where most people's expectations need to be calibrated. You are not going to harvest tomatoes and cucumbers in January without heating equipment. The light levels are too low, and the temperatures drop too far at night.
But you can still harvest fresh food in the middle of winter.
Winter greenhouse crops:
- Spinach (hardy to about 10 degrees F when established)
- Kale (very cold tolerant, especially winter varieties like Winterbor)
- Lettuce (choose cold-tolerant varieties like Winter Density or Ananas)
- Arugula
- Parsley
- Cilantro
- Microgreens and salad mix
- Mustard greens
Leafy greens do not need much heat. They need light and protection from hard freezes. A cold winter night of five degrees outside might make the greenhouse sit at 30 degrees inside, and that is enough for hardy greens to keep growing slowly.
The limiting factor in winter is light, not temperature. Short days and heavy cloud cover will slow growth significantly. That is why south-facing placement matters so much. In the dead of winter, the greenhouse will produce at about 10 to 30 percent of its summer rate. That is still food your neighbors are not growing.
Temperature and Ventilation: The Daily Job
Greenhouse growing is 20 percent planting and 80 percent watching what the temperature does.
You need a thermometer. Two of them, ideally. One hanging at plant level inside, and one near the ground to check soil temperature. A max-min thermometer shows you the highest and lowest temperatures since you last checked, which is more useful than a digital reading taken at a single moment.
Here is the basic pattern:
- Before sunrise, check the minimum temperature. If the greenhouse dropped below 25 degrees Fahrenheit and you have sensitive plants, you may need to add row cover inside the greenhouse as an extra insulation layer.
- Midmorning, check if the temperature is climbing toward 75 degrees. If it is past 75, open vents or a side door to release heat.
- Mid-afternoon, check again. If it is past 85, open more vents. Plants stressed above 90 degrees will stop growing and may die.
- Late afternoon, close vents as the sun drops. You want to trap what little heat is left for the night.
A simple greenhouse thermometer costs under ten dollars. A max-min thermometer costs about fifteen dollars. Neither is an investment you can skip.
If you are growing through winter in Zone 7a and temperatures regularly drop below ten degrees Fahrenheit outside, you may want to consider a small electric heater or a passive heat store. Passive options include a few water-filled black barrels or a stone floor that absorbs daytime heat and releases it at night. Active options include a small ceramic heater on a timer set to kick on when the greenhouse drops below a threshold.
Most beginners do not need either in their first season. But knowing the option is there helps you plan.
Five Common Beginner Mistakes
1. Choosing the wrong size
Many beginners buy the largest greenhouse they can afford. This makes the greenhouse harder to manage and more expensive to maintain. A four-by-eight foot greenhouse is enough for a serious home gardener. It can hold eight to twelve raised beds or four large grow-out beds. Start small. You can always add more structure later.
2. Forgetting to water
Greenhouses dry out fast. Sunlight warms the soil, and plants grow faster in warmth, which means they drink faster. On a sunny winter day, you may need to water a greenhouse garden every other day. In summer, daily watering is normal. Set a schedule and stick to it. Drip irrigation on a timer solves this problem almost entirely.
3. Overcrowding
Plants in a greenhouse grow fast. Tomatoes that fit in a three-foot gap when planted will touch each other and create humidity problems within three weeks. Give each plant the space it needs on the label, and add ten percent more. Crowded plants attract disease.
4. Ignoring humidity
Greenhouses trap moisture from watering, transpiration, and soil evaporation. High humidity encourages fungal diseases like powdery mildew and botrytis. Good ventilation solves this. Open vents. Move air. Remove any dead leaves or fallen plant material that might rot on the greenhouse floor.
5. Expecting summer-level production in winter
This is the hardest one for beginners to accept. A greenhouse in January will not produce like a greenhouse in June. Light levels, day length, and ambient temperature all drop. Growth slows dramatically. The goal in winter is survival and slow production of cold-hardy crops, not maximum harvest. If you adjust your expectations, the greenhouse stays useful year-round instead of becoming a disappointment in the dead of winter.
