The safe range for lacto-fermentation is 2 to 3 percent salt by total weight. This means salt makes up 2 to 3 percent of the combined weight of your vegetables and water.
Here is a practical reference for half a pound of vegetables:
- 2 percent salt: about 3 grams or roughly 1/2 teaspoon
- 3 percent salt: about 4.5 grams or roughly 3/4 teaspoon
For beginners, 2.5 percent is a reliable middle ground. It produces a clean, tangy ferment without being overly salty.
To figure this out precisely, use a kitchen scale. Weigh your vegetables. Weigh the water you will add. Add the two weights together. Multiply by 0.025 to get your salt amount in grams.
If you do not have a scale, this shortcut works for a standard quart jar packed tightly with chopped vegetables:
- 2 level tablespoons of kosher salt or sea salt per quart jar will usually land near 2.5 percent when the jar is full.

Prepare the vegetables. Shred cabbage for sauerkraut. Cut cucumbers into spears or coins. Trim green beans to fit. There is no need to cook or blanch anything.

How Long to Wait
Fermentation speed depends on temperature. The warmer it is, the faster the bacteria work. The cooler it is, the slower they work.
At room temperature between 65 and 75 degrees Fahrenheit:
- Radishes and thin carrot sticks: 3 to 5 days
- Cucumbers and green beans: 5 to 10 days
- Cabbage and beets: 10 to 14 days

Common Problems and How to Fix Them
White film on the surface
A thin, whitish film called kahm yeast is the most common issue. It is not dangerous. It is not mold. It forms when oxygen reaches the surface during fermentation. Kahm yeast can give your ferment a slightly off flavor. To prevent it, keep vegetables fully submerged and use a weight. If you see kahm yeast, skim it off with a clean spoon. You can also tilt the jar slightly and use a spoon to push the fermenting vegetables toward the side, reducing the exposed surface area.
Mold on the surface
Fuzzy, colored spots that are green, black, pink, or orange are real mold. This is different from kahm yeast. If you see mold, remove the top layer of vegetables and brine. If the mold is confined to the very top and the vegetables below look and smell normal, the ferment is usually still salvageable. Soft or mushy vegetables

Safety Guidelines

Pick small, firm cucumbers, no larger than four inches. Wash them and trim the blossom end. The blossom end contains enzymes that soften the vegetable. Cutting it off helps the pickles stay crisp.
Pack cucumbers whole or cut into spears into a quart jar. Dissolve 2 tablespoons of plain salt in 2 cups of clean water. Pour the brine over the cucumbers so they are fully submerged.
