Most fermentation guides tell you to buy fermentation weights. They sell glass disks, silicone paddles, and spring-loaded gadgets that look like kitchen hardware store items. You do not need any of them. You can keep your fermenting vegetables safely submerged using two items you already own: a clean glass jar and water.
This is the water-weight method, and it works the same way as buying a dedicated fermentation weight. It pushes the vegetables under the brine so that air cannot reach them. The only difference is that instead of paying twelve dollars for a specialized plastic or glass disk, you fill a small canning jar with water and place it on top of the vegetables.
Why Keeping Vegetables Under the Brine Matters
Fermentation is an anaerobic process. The good bacteria that turn vegetables tangy and sour need little or no oxygen to do their work. When vegetable matter sits exposed to air, two things can happen.
Mold grows on the surface. It looks fuzzy, often white or green, and it ruins the batch. You cannot scrape it off and continue. If mold is present on the top layer, you must discard the entire batch.
Kahm yeast forms a white film on the surface. It is not dangerous. It is more of a quality problem than a safety problem. Kahm yeast makes the ferment taste bitter or dull instead of clean and sharp.
The brine itself protects the vegetables below it. Salt draws moisture out of the vegetables and creates a salty liquid environment. The bacteria that thrive in that salty environment produce lactic acid, which further preserves the vegetables and gives fermented food its characteristic tang.
The goal is simple. Keep all the solid vegetables below the surface of the brine for the entire fermentation period.
What the Water-Weight Method Needs
You need three things.
- A fermentation jar. A wide-mouth quart jar works well for most vegetables. A wide-mouth half gallon jar works for larger batches. You do not need a specialty fermenting jar with a lid and airlock. Any clean glass jar with a wide mouth is fine.
- A floaties trap. This is a cabbage leaf, a piece of parchment paper cut to fit the jar, or a folded square of clean cloth. It goes on top of the shredded vegetables to stop loose pieces from floating to the surface.
- The water weight. Fill a small glass jar with water. Use a four ounce jelly jar, a two ounce mini mason jar, or any clean small glass jar with a lid that closes tightly. Screw the lid on. Place it on top of the vegetables, on top of the floaties trap.
The water weight pushes the floaties trap down. The floaties trap pushes the vegetables down. The vegetables stay below the brine. The jar ferments without mold or kahm yeast.
How to Build Your Water Weights
This takes two minutes per weight. You are making a reusable tool that you can store in a drawer for future batches.
- Pick a small glass jar with a screw-on lid. A canning jelly jar from the grocery store works perfectly. Four ounce to six ounce jars are ideal. The jar must be clean and free of food residue.
- Fill the jar with water from the tap or a clean source. Leave a small air space at the top. The goal is just to have something heavy and sealed that fits inside your fermentation jar.
- Screw the lid on tightly. Test it by turning the jar upside down and pressing the bottom. Water should not leak. If it leaks, the lid is not sealed and you need a different jar or a different lid.
- Store the sealed weight in a drawer or cupboard. They are sealed, so there is no risk of leaking. When you need one, take it out and use it.
You can make several of these at different times. A four ounce canning jar with a lid costs about fifty cents at most grocery stores. If you have extra jars lying around, the cost is zero. The lids can wear out over time. If a lid no longer seals, just replace it. Two-piece canning lids are cheap. The jars themselves last for years.
How to Use It During Fermentation
Here is the full sequence for making sauerkraut or fermented pickles in a regular glass jar using the water-weight method.
- Shred or chop your vegetables. Cabbage for sauerkraut. Cucumbers for pickles. Carrots, radishes, or any firm vegetable you want to ferment.
- Salt the vegetables. Use two percent of the vegetable weight in salt. Weigh the vegetables. Multiply by zero point zero two. That is your salt amount. Mix it in thoroughly.
- Pack the vegetables into the jar. Push them down firmly as you go. The salt will start drawing out liquid. You want the vegetables submerged in their own brine before you add the weights.
- Add more salt water if needed. If the vegetables do not release enough brine to cover them fully, dissolve extra salt in clean water and pour it in until the vegetables are fully submerged. Leave about an inch of headspace at the top of the jar.
- Place the floaties trap on top. A torn cabbage leaf works best because it matches the vegetables and does not introduce any foreign material. Fold parchment paper to fit the jar opening if you do not have cabbage leaves on hand.
- Place the water weight on top. Set the sealed jar of water on top of the floaties trap. It should push the vegetables well below the brine surface.
- Cover the jar opening loosely. Do not tighten the lid. A loose lid, a cloth cover, or a plastic jar lid that is only finger tight all work. Fermentation produces carbon dioxide gas. If the lid is sealed tight, pressure will build and may cause the jar to crack or the contents to spray out.
- Store the jar at room temperature out of direct sunlight. Check it daily for the first few days. Make sure the vegetables stay below the brine. If brine has evaporated slightly, add a little more salt water.
- Taste after about five to seven days. The vegetables should taste tangy and slightly sour. If you like them more sour, let them go longer. Ten to fourteen days is common for sauerkraut. Pickles may need a few extra days.
Common Problems and What to Do About Them
The water weight leaks. This happens if the lid on the small jar is not sealed. Check the seal before placing it in the fermenting jar. If it leaks, the water will dilute your brine and change the salt ratio. Replace the leaking jar with a fresh water weight.
The brine level drops too low. Water evaporates slowly from open fermentation jars. If the brine level falls enough that some vegetables are exposed, add more salt water until they are covered again. You can also press down harder on the water weight with a clean spoon to squeeze more brine to the surface.
Mold appears. Even with the water-weight method, mold can happen if the vegetables shift and poke above the brine. If you see fuzzy green or black growth, discard the batch. Do not try to save it. Kahm yeast, which looks like a flat white film, is not dangerous. You can skim it off and continue.
The vegetables taste weak. The salt ratio was probably too low. Two percent by weight is the safe baseline for most vegetables. If you want more flavor, taste the brine before packing the jar. It should taste noticeably salty, about the same as a light soup. If it does not taste salty enough, the fermentation will be slower and the vegetables are more likely to spoil.
Why This Method Works Well
The water-weight method is effective because it is simple. There are no moving parts, no silicone that can crack, and no proprietary plastic that costs more than the vegetables you are fermenting. If you have any extra jars lying around, the cost is zero.
The method also makes it easy to see how well your ferment is going. When you lift the water weight during a daily check, you can clearly see whether the vegetables stayed submerged. If the brine covers everything, you know the setup is working.
One thing to keep in mind is that the water weight adds extra mass to the system. That is usually a good thing because it keeps the vegetables pressed down more firmly than a loose cabbage leaf alone would. But it also means you need a jar sturdy enough to handle the weight. Standard quart and half gallon canning jars are designed to handle pressure. They are fine for this use.
Best For and Not Best For
The water-weight method works well for:
- Sauerkraut in quart or half gallon jars
- Fermented pickles
- Firm root vegetables like carrots or radishes
- Small batches you can fit in a standard wide-mouth canning jar
It does not work as well for:
- Very large batches that go into wide crocks. A water weight in a crock would be impractical because you would need a larger sealed jar and the jar might not fit through the opening. A plate and glass weight setup or a dedicated fermentation crock with a water lock works better for large batches.
- Jars with a narrow regular mouth. The water weight needs to fit through the jar opening. Regular-mouth canning jars have a narrow opening that makes it harder to reach in and place the weight. Wide-mouth jars are the standard for a reason.
Summary
You do not need to buy anything special to ferment vegetables at home. A wide-mouth glass jar, some salt, and a small sealed jar filled with water are all you need to keep your ferment safe. The water weight keeps the vegetables under the brine. The brine keeps out the air. The bacteria below the brine do the rest.
