A garden-dried tomato, sliced thin and left on a rack until it shrinks to leathery sweetness, tastes like concentrated summer. It is smoky, tangy, and nothing like anything from a can.
Drying is the simplest preservation method available to any gardener. It requires no large pots of boiling water, no jars to sterilize, no pressure canner, and very little electricity if you use the right approach. The energy cost of drying a basket of tomatoes is lower than the energy cost of running your refrigerator for a single day. A single tray of peppers in a $30 secondhand dehydrator will keep those peppers flavorful for nearly a year.
But drying does have rules. Some vegetables must be blanched first to stop enzyme activity. Some fruits need a dip to prevent browning. The wrong storage container turns good dried food into leathery, moldy disappointment in a week. Knowing the details makes the difference between dried produce that stays good for twelve months and dried produce that crumbles or spoils before winter.

Why Drying Deserves a Place at the Table
Drying does not get the same attention as canning or freezing, but it has several advantages that make it worth learning, especially for beginner gardeners.
It uses almost no energy. A sunroom rack or a shade cloth uses zero electricity. A dehydrator draws about fifty watts, roughly the same as a desk lamp. Oven drying uses more energy but still far less than running a freezer or keeping a canning pot boiling for an hour. If you want to preserve without adding to your electric bill, drying is the right choice.
It saves pantry space. A pound of fresh green beans takes up a bowl. A quarter pound of dried green beans takes up a small jar. Dried produce is lightweight and compact, which means you can store more of your harvest in less room than freezing or canning allows.
It adds flavor to everyday cooking. Dried tomatoes, mushrooms, and herbs have concentrated flavor that fresh versions cannot match. They are not just backups for winter. They are ingredients you can use year-round to make soups, stews, sauces, and snacks taste like they were made with intention.
It is beginner friendly. You do not need to master water bath canning curves or pressure canner timing. The learning curve for drying is gentle. Slice, dry, store. The margin for error is larger, and the consequences of a mistake are less severe.
It preserves nutritional content. Drying retains most vitamins and minerals, though some heat-sensitive nutrients like vitamin C are reduced, just as they are in most preservation methods. The fiber, potassium, and antioxidants in dried fruit and vegetables remain intact.
Three Ways to Dry
There are three practical drying methods for home gardeners. Each has tradeoffs, and the best one depends on your climate, budget, and how much produce you have.
Electric Dehydrator
An electric dehydrator is the most consistent method. It circulates warm air evenly across multiple stacked trays, keeps temperature steady, and lets you dry different crops at once without flavor mixing. Quality dehydrators run between one hundred and one hundred sixty degrees Fahrenheit.
A basic unit with five to eight trays costs fifty to one hundred fifty dollars new. You can often find secondhand dehydrators at garage sales or farm auctions for twenty to forty dollars. They last for years and dry consistently regardless of outside weather.
If you plan to dry regularly and have more than a few batches of produce per season, a dehydrator is worth the investment.
Oven Drying
Most ovens can dry produce, though they were not designed for it. Set your oven to the lowest possible temperature, usually between one hundred forty and one hundred sixty degrees Fahrenheit. If your oven will not go that low, use two hundred degrees and monitor carefully. Propped-open oven door dries slower but works if you have the patience.
To use an oven for drying:
- Line baking sheets with parchment or silicone mats.
- Arrange produce in a single layer with space between pieces.
- Set the oven to its lowest temperature.
- Prop the door open two to three inches with a wooden spoon to let moisture escape.
- Check frequently, especially during the first drying session.
Oven drying uses more energy than a dehydrator and the temperature tends to be less even, but it costs nothing extra if you already have an oven. It works well for smaller batches and for gardeners who do not want to buy a dedicated appliance.
Shade or Sun Air Drying
Before appliances existed, people dried fruit and vegetables in the sun or in shaded, well-ventilated spaces. This method still works, especially in dry climates, though it is slower and less predictable than heating methods.
Shade air drying works well for herbs, onions, garlic, chile peppers, and bunches of grapes turned into raisins. Hang bunches upside down in a dry, airy room or shed. Lay herbs on screens or paper bags with holes punched in them. It takes one to three weeks depending on humidity and airflow.
Sun drying works in hot, dry weather with low humidity. Lay sliced tomatoes, peaches, or eggplant on clean screens in full sun. Cover with fine mesh to keep insects out. You need at least four to five hours of direct sun per day, and the temperature should stay above eighty-five degrees Fahrenheit. Sun drying is unreliable in Zone 7a summers when humidity is often high. Do not attempt it during the first two weeks of a prolonged rainy spell. If the air feels sticky, the produce will mildew before it dries.
Air drying requires zero electricity but demands favorable weather and good airflow. Use it for herbs, small batches of peppers, and any crop that tolerates a slow dry. For anything where food safety matters, prefer the dehydrator or oven.
Best Vegetables to Dry
Not every vegetable dries well. High-moisture crops like lettuce, cucumbers, and celery have too much water and not enough structure to dry into something useful. These are the vegetables that actually work when dried.
Carrots dry into a great soup ingredient. Slice into thin rounds or small dice. They rehydrate well in stews and broths and add sweetness without much work. Dry at one hundred twenty-five degrees Fahrenheit for four to six hours.
Green beans hold their color and texture well when dried. Blanch first. Snap the ends, slice into one-inch pieces, and dry at one hundred twenty-five degrees for six to eight hours. Add directly to soups and stews. They rehydrate during cooking.
Tomatoes are the star of home drying. Slice into quarter-inch rounds, arrange on trays, and dry at one hundred thirty-five degrees for six to eight hours until leathery and pliable. For sun-dried style, remove seeds and skins first. Dry tomatoes for eight to twelve hours for a leatherier texture that stores longer. Use dried tomatoes in pasta, flatbreads, grain bowls, or pesto.
Zucchini and summer squash dry well but have high water content. Slice thin, salt lightly to draw out extra moisture, then dry at one hundred twenty-five degrees for eight to ten hours. Best used in baked goods, muffins, or breads rather than as a standalone dried snack.
Peppers (sweet and hot) dry beautifully. Leave whole for chile flakes, slice for flakes or rehydration. Seed and slice sweet peppers for chips. Dry at one hundred twenty-five degrees for six to ten hours. Whole hot peppers take longer, up to twelve hours. Store whole dried peppers in a jar and crush when needed.
Onions and garlic dry into powerful flavor bases. Slice onions into thin rings or small dice. Peel and halve garlic bulbs. Dry at one hundred twenty-five degrees for six to eight hours until brittle. Grind dried onions and garlic into powder for seasoning. Store in an airtight container.
Mushrooms (if you grow or forage them) dry very well. Wipe clean, slice into quarter-inch pieces, and dry at one hundred twenty-five degrees for six to eight hours. Store whole or grind into mushroom powder for umami flavor in soups and sauces.
Herbs dry quickly and easily. Leave basil, oregano, thyme, rosemary, and parsley on their stems or lay leaves on screens. Dry in shade with good airflow or at one hundred degrees in a dehydrator for two to four hours. Crumble into jars once fully dry. Store away from light.
Fruits to Dry
Dried fruit makes a natural sweet snack and a useful addition to oatmeal, granola, and baking.
Apples are the easiest fruit to dry. Core and slice into quarter-inch rings. Dip in ascorbic acid solution (one teaspoon ascorbic acid per cup of cold water) or lemon juice water to prevent browning. Dry at one hundred thirty-five degrees for six to eight hours.
Peaches and nectarines dry into intensely sweet pieces. Peel if desired, slice, and dip in ascorbic acid solution. Dry at one hundred thirty-five degrees for eight to twelve hours.
Grapes become raisins when dried naturally or in a dehydrator. Use thin-skinned varieties like Concord or Thompson seedless. Wash thoroughly. Dip in boiling water for thirty seconds to crack the skins slightly, which speeds drying. Dry at one hundred thirty-five degrees for twenty-four to thirty-six hours. This is a slow dry. Be patient.
Berries (strawberries, raspberries, blueberries) dry but shrink dramatically. Slice strawberries in half. Leave small berries whole. Dip in ascorbic acid solution. Dry at one hundred twenty-five degrees for eight to twelve hours. Dried berries are best used in baking or granola rather than as a standalone snack. They tend to be chewy rather than crisp.
Preparing Your Harvest
Prep matters more than most people realize. The way you wash, slice, and treat produce before it goes into the dryer determines how well it dries, how long it stores, and whether it tastes good.
Wash everything. Rinse produce under cool running water. Remove stems, cores, seeds, and any damaged areas. Discard anything with soft spots, mold, or insect damage. You cannot dry away spoilage.
Slice uniformly. Even slicing is the single most important prep step. If pieces vary in thickness, thin ones will over-dry while thick ones stay moist inside. Aim for quarter-inch slices for most fruits and vegetables. Use a mandoline if you have one. It gives consistent thickness and speeds up prep dramatically.
Blanching. Most vegetables should be blanched before drying. Blanching means briefly immersing the produce in boiling water, usually for one to three minutes, then plunging it into ice water to stop the cooking. Blanching serves three purposes:
- It deactivates enzymes that cause color loss, flavor deterioration, and nutrient breakdown during storage.
- It softens the tissue slightly, which speeds up drying and improves rehydration later.
- It reduces microbial load on the surface.
Vegetables that need blanching:
- Carrots: one minute
- Green beans: three minutes
- Peppers: one minute
- Onions: two minutes
- Zucchini: one minute
- Tomatoes: thirty seconds
- Potatoes: three minutes plus a sulfite dip to prevent browning
Fruits generally do not need blanching, but they benefit from an ascorbic acid dip to prevent browning. Use one teaspoon of ascorbic acid powder or one tablespoon of lemon juice per cup of cold water. Dip sliced fruit for two minutes, then drain and arrange on trays.
Do not blanch herbs. Herbs dry best raw. Lay them flat on a screen or hang them in bundles. Heat damages their delicate oils.
Step by Step: Drying
Once your produce is prepped, the actual drying process is straightforward.
Arrange on trays. Spread produce in a single layer with space between pieces for airflow. Do not overlap. Overlapping pieces will not dry evenly.
Set the temperature. For vegetables, use one hundred twenty-five degrees Fahrenheit. For fruits, use one hundred thirty-five degrees. For herbs, use one hundred degrees. These are conservative temperatures that preserve color, flavor, and nutrients.
Load the trays. Place trays in the dehydrator or oven. If using an oven, prop the door open two to three inches to let moisture escape. Rotate trays halfway through the drying cycle for even drying.
Be patient. Drying times vary widely by moisture content, slice thickness, humidity, and airflow. Expect six to twelve hours for most vegetables, eight to sixteen hours for most fruits, and two to four hours for herbs. Do not rush this step. Under-dried produce will mold in storage.
Check for done. Properly dried produce passes the condition test:
- Fruits should be leathery and pliable with no visible moisture. If you squeeze a piece, no liquid should appear. Dried apples should bend without cracking.
- Vegetables should be brittle and crack when bent. Dried carrots should snap cleanly in half. Dried tomatoes should be leathery but not sticky.
- Herbs should crumble easily between your fingers.
If a piece still feels soft in the center or leaves a damp spot when cut, it needs more time. Err on the side of over-drying. A slightly over-dried piece rehydrates fine. An under-dried piece molds.
- Cool before storing. Let dried produce cool to room temperature on the trays before packaging. Hot produce will create condensation inside the storage container, which invites moisture and mold.
Storing and Shelf Life
Storage is where most home dryers make mistakes. Dried produce lasts a long time, but only if stored correctly.
Containers. Use glass jars with tight-fitting lids, Mylar bags with oxygen absorbers, or vacuum-sealed bags. Plastic bags work for short-term storage but are not ideal for long-term keeping. Glass jars are the best all-around choice for home use. They are airtight when sealed, you can see the contents, and they stack neatly in a pantry.
Conditions. Store dried produce in a cool, dark, dry place. Ideal conditions are below seventy degrees Fahrenheit with low humidity. A pantry or cupboard is perfect. Do not store dried produce next to the stove, in direct sunlight, or in an unconditioned attic where temperatures swing widely.
Shelf life. Properly dried and stored produce keeps well:
- Dried vegetables: twelve to eighteen months
- Dried fruits: twelve to twelve months
- Dried herbs: six to twelve months, losing flavor gradually
- Dried mushrooms: twelve months
Color darkening over time is normal and does not mean the food has spoiled. Flavor decline is the first sign that dried produce is past its peak. If it smells off, looks moldy, or has an unusual texture, discard it.
Reconditioning. Before sealing your first batch of dried produce, do a reconditioning step. Place dried fruit in a sealed glass jar and shake it once a day for one week. If condensation forms on the inside of the jar, the fruit is not dry enough. Return it to the dryer for more time. If no condensation appears after a week, the fruit is dry enough to store long-term. This step catches moisture pockets that a quick visual check might miss.
Freezing is optional but helpful. If you live in a humid climate or want to extend shelf life beyond eighteen months, store dried produce in the freezer. Freeze in airtight bags or jars. This is not required, but it is a useful insurance policy for large harvests.
Using Dried Produce
Dried food is not just a storage method. It is an ingredient class with its own strengths.
Rehydrating in cooking. Most dried vegetables are meant to be rehydrated during cooking. Add dried carrots, green beans, onions, or mushrooms directly to soups, stews, and braises. They will rehydrate in the liquid as they cook. Add them about thirty minutes before the dish is done. Do not expect them to rehydrate instantly. Slow cooking is the point.
Dried tomatoes in pasta and grain bowls. Rehydrate dried tomatoes in hot water for twenty minutes, drain, and chop. They are ready to toss into pasta sauce, fold into quinoa, or layer on flatbread. They concentrate the tomato flavor far beyond what fresh tomatoes can deliver.
Dried herbs for seasoning. Crumble dried herbs into dishes during cooking. Use about one-third the amount called for with fresh herbs, since drying concentrates flavor. Dried basil, oregano, and thyme hold up well in sauces and soups.
Dried fruit as a snack or baking ingredient. Dried apples, peaches, and apricots make a natural snack on their own. Chop dried fruit into oatmeal, granola, bread dough, or trail mix. They add sweetness and chew without refined sugar.
Dried pepper flakes and powder. Crush dried hot peppers between your fingers or grind in a mortar and pestle for fresh chili flakes. Dry sweet peppers and grind into powder for seasoning.
Dried onion and garlic powder. Grind dried onion and garlic pieces in a spice grinder or crush in a mortar. Store the powder in a small jar. It lasts just as long as the whole pieces and adds intense flavor to almost any savory dish.
Getting Started
Here is a simple plan for your first drying season in Zone 7a:
Buy or borrow a dehydrator. A basic five-tray unit costs fifty to one hundred dollars. A secondhand one is cheaper. If you do not want to buy one, start with oven drying.
Dry your first batch in late July. Tomatoes are the easiest starting crop. You likely have them ripening in the garden or from a neighbor. Slice, dry at one hundred thirty-five degrees for six to eight hours, cool, and jar.
Add a second batch in early August. Green beans or peppers. Blanch beans first. Slice peppers thin. Dry at one hundred twenty-five degrees for six to eight hours.
Dry herbs as they finish flowering. Oregano, thyme, and basil peak in flavor just before or during flowering. Cut before flowering for the best taste. Dry on screens in shade or at one hundred degrees in a dehydrator.
Try dried fruit in September. Apples from a local orchard or your own trees. Slice, dip in ascorbic acid solution, dry at one hundred thirty-five degrees.
Store everything in glass jars in a cool, dark pantry. Label each jar with the contents and date. Recondition dried fruit before long-term storage.
Two to three batches of vegetables. One batch of herbs. One batch of fruit. One season of drying. That is a realistic first-year goal.
Drying is the preservation method that asks the least of you and gives back more than most people expect. It turns a flood of summer tomatoes into jars of concentrated flavor that last until next year. It turns a handful of herbs into year-round seasoning. It turns a bowl of overripe fruit into something you can keep on the shelf instead of composting. It does not require a pressure canner or a water bath setup. It does not require a big investment.
