Every kitchen produces waste that is worth more than the trash it becomes. Banana peels, coffee grounds, eggshells, wilted lettuce, grass clippings from the edge of the lawn, dry leaves raked in November. These are not garbage. They are the raw material for something your garden desperately needs and usually cannot get from a store at any price.

Composting turns kitchen scraps and yard waste into dark, crumbly, earthy soil that feeds plants without chemicals or synthetic fertilizer. It also keeps a large share of household waste out of the landfill, where organic matter decomposes without oxygen and produces methane, a greenhouse gas far more potent than carbon dioxide.

You do not need a large yard. You do not need expensive equipment. You do not even need to be particularly interested in environmental philosophy, though that helps. You need a pile, some attention, and the willingness to mix two categories of material in the right proportions.

This guide walks through setting up a simple backyard compost system from scratch. It covers the greens and browns balance, how to build and maintain a pile, when to turn it, what to avoid, and how to tell when the compost is finished. It is aimed at a Zone 7a home garden, which gives you a long warm season for active decomposition.

What Composting Actually Is

Composting is controlled decomposition. Organic material breaks down through the activity of bacteria, fungi, and small soil organisms. These microbes eat the organic matter, breathe oxygen, release heat, and convert it into a new substance: compost.

The process happens everywhere organic matter accumulates, but uncontrolled decomposition in a trash bin or an unmaintained pile usually goes anaerobic, meaning it runs out of oxygen. Anaerobic decomposition smells bad, attracts pests, and takes much longer. Composting works best when it stays aerobic, meaning oxygen is available throughout the pile at all times. You control this by turning the pile, keeping it the right size, and mixing in enough dry, fluffy material that creates air pockets.

The end product is compost. Finished compost is dark brown, crumbly, and smells like forest soil. You cannot see the original materials anymore. If you stick your hand in, it should feel cool, not hot. Hot compost is still active and not finished. Cool compost is either broken down completely or never got started. You are aiming for the middle.

The Two Categories: Greens and Browns

Compost is built from two categories of material, sometimes called greens and browns. The names refer to their color but also to their chemical role in the pile.

Greens are nitrogen-rich materials. They are usually fresh, moist, and decompose quickly. They fuel the microbial population. Without enough greens, the pile has nothing to eat and decomposition stalls.

Common greens:

  • Kitchen scraps: fruit and vegetable peels, cores, ends, wilted greens
  • Coffee grounds and paper filters (unbleached)
  • Tea bags (remove the staple if present)
  • Fresh grass clippings (thin layers only)
  • Fresh plant trimmings from garden cleanup
  • Crushed eggshells (technically mineral, but usually grouped with greens)

Browns are carbon-rich materials. They are usually dry, fibrous, and decompose slowly. They create structure and air pockets in the pile. Without enough browns, the pile goes slimy, compacted, and smelly.

Common browns:

  • Dry fall leaves
  • Shredded cardboard (non-glossy, no heavy plastic coating)
  • Straw or hay
  • Sawdust from untreated wood
  • Dried grass clippings
  • Dry twigs and small branches (chopped small)
  • Paper towels or napkins used without chemicals

The target ratio by volume is about one part green to two or three parts brown. The browns should always outnumber the greens. If you are unsure, err on the side of more browns. A pile with too many browns will just take a little longer. A pile with too many greens will stink and attract flies.

Setting Up Your Compost System

You have three basic options for a home compost bin. Pick the one that fits your space and your habits.

Open pile. This is the simplest option. You pile the materials directly on the ground in a sunny spot with decent drainage. The ground underneath allows drainage and gives access to soil organisms. An open pile is easy to build, easy to turn, and easy to access, but it looks untidy and may attract animals if not managed well. A wire mesh cylinder or wooden slat frame keeps it contained and improves the appearance.

Enclosed bin. A commercial bin or a DIY bin made from pallets, wire, or lumber gives a neater appearance and better temperature retention. The walls protect the pile from wind and rain and make it harder for animals to get in. A simple three-bin wooden system works well: one bin for fresh material, one for active decomposition, one for finished compost. For a first attempt, a single enclosed bin is plenty.

Compost tumbler. A tumbler is a sealed drum mounted on a frame that you rotate to mix the contents. It is the most convenient option for turning and the most weather-resistant, but it holds less material, costs more, and requires physical effort to spin. It works well for smaller households with modest yard waste.

For a typical Zone 7a garden, a simple enclosed bin made from three wooden pallets staked together, or a commercially available two-bin wooden system, is the best balance of cost, convenience, and capacity.

Where you place the bin matters too. Choose a spot that is:

  • In partial sun to full sun. Heat helps decomposition.
  • On bare soil or grass, not on concrete or asphalt. Soil contact lets organisms move in and drainage works properly.
  • Easy to reach year-round. You will walk out there with a bucket of scraps in spring and a shovel in winter. If it is tucked behind a shed with no path, you will avoid it.
  • Flat and well-draining. A pile that sits in standing water will never heat up and will become anaerobic.

Building Your First Pile

Start with a layer of coarse browns at the bottom, about four to six inches thick. Twigs, small branches, or coarse straw work well. This layer creates an air channel at the base so the pile can breathe from the bottom.

Then begin layering greens and browns. The rule of thumb: every time you add a bucket of kitchen scraps (greens), cover it with two or three buckets of dry leaves or shredded cardboard (browns). This burying step is important. It hides the food from flies and prevents odor.

Continue layering until the pile is at least three feet tall and three feet wide. Volume matters. A pile smaller than three feet on each side loses heat too quickly and cannot maintain the temperatures that drive fast decomposition. If you do not have enough material right now, start the pile and keep adding. But once it reaches the minimum size, try to maintain it at that size or larger.

Add water as you build. The pile should feel like a wrung-out sponge. Squeeze a handful of material from the middle of the pile. If water drips out, it is too wet. If no moisture comes out at all and the material feels dusty, it is too dry. Add water sparingly and mix it in.

Place a lid or some tarps over the top if you get heavy rain. Excess water floods the air pockets and suffocates the aerobic bacteria. A loose cover keeps rain off without sealing the pile.

Maintaining the Pile: The Four Things Compost Needs

Compost needs four things to work efficiently. Think of them as the operating conditions.

Moisture. The pile needs to stay damp but never soggy. In a dry summer, you may need to water the pile once or twice a week. In a wet spring, you may need to add extra dry browns to absorb excess moisture. The wrung-out sponge test is your guide.

Air. Oxygen enters the pile when you turn it. Turning mixes the material, reintroduces oxygen, and redistributes moisture and microbes. Turn the pile with a pitchfork or shovel every one to two weeks. If you have a three-bin system, move the active compost from the middle bin to the finishing bin, and start a fresh pile in the empty bin.

Heat. A healthy, well-balanced pile will get warm to hot in the center. You can check this by sticking your arm into the pile up to the elbow. If it is warm (around body temperature) or hot (too hot to keep your arm in), the microbes are working. If the pile is cool all the way through, it may need more greens, more water, or more turning.

Time. Decomposition is not instant. A well-managed pile produces usable compost in two to four months in warm weather. A neglected pile may take six to twelve months, or longer. You cannot speed this past a certain point, but you can slow it down considerably by ignoring it.

Turning and Managing the Pile

Here is a practical schedule for the first few months:

Week one. Build the pile. Water it to the wrung-out sponge consistency. Cover with a loose tarp.

Week two. Turn the pile. Move all the material from the outside to the inside and vice versa. This redistributes the cooler outer layer into the hotter core. Check moisture and add water if dry.

Week four. Turn again. The pile should already be noticeably smaller and warmer than when you started. The original scraps should be breaking down. Check for odor. A well-managed pile smells earthy, not rotten. If it smells bad, add more browns and turn it.

Week six through eight. By now the pile should be significantly reduced in volume. Turn it one more time. If the material looks dark, crumbly, and smells like soil, it may be finished. If it still has recognizable scraps and feels warm in the center, keep it going and turn again in two weeks.

Month three to four. The compost should be dark brown, crumbly, and cool to the touch. You should not be able to identify the original materials, except maybe a few eggshell fragments or a piece of bark that takes longer to break down. This is finished compost.

You can sift the finished compost through a hardware cloth screen to remove large pieces. Return the large pieces to the active pile to finish decomposing. Use the screened compost in your garden beds, potted plants, or as a top dressing around established plants.

What Not to Put in the Compost

Not everything decomposes safely in a backyard pile. Keeping certain materials out is the difference between a healthy, pest-free system and one that attracts rats, raccoons, and flies.

Do compost:

  • Fruit and vegetable scraps
  • Coffee grounds and filters
  • Tea bags (without staples)
  • Eggshells (crushed)
  • Fresh grass clippings (in thin layers mixed with browns)
  • Dry leaves
  • Shredded cardboard and paper (non-glossy)
  • Straw and hay
  • Wood chips and sawdust from untreated wood
  • Garden trimmings (unless diseased)

Do not compost:

  • Meat, fish, or bone scraps. These attract predators and decompose slowly and unpleasantly.
  • Dairy products. Same problem as meat.
  • Oily or greasy foods. They coat materials and prevent water and air from reaching the microbes.
  • Pet waste from dogs or cats. These can carry human pathogens. Herbivore manure like horse or rabbit is fine.
  • Diseased plants. The temperatures in a home compost pile rarely get hot enough or stay hot long enough to kill all disease spores.
  • Weeds that have gone to seed. Seeds may survive and sprout when you spread the compost.
  • Treated or painted wood. Chemicals will leach into your compost and eventually into your soil.
  • Glossy or coated paper. Inks and coatings do not break down safely.
  • Coal or charcoal ash. These contain sulfur compounds harmful to plants.
  • Diapers or sanitary products. These do not decompose in a backyard pile and carry biological hazards.

Troubleshooting Common Problems

The pile smells bad. This almost always means there are too many greens and not enough browns, or the pile has become compacted and anaerobic. Add a generous layer of dry leaves or shredded cardboard. Turn the pile to re-introduce oxygen. Bury any remaining kitchen scraps deep in the center and cover them with browns.

The pile is not heating up. The pile may be too small, too dry, or lacking nitrogen. Check the volume first. It needs at least three cubic feet to retain heat. If it is big enough, add water until it feels like a wrung-out sponge. If it is already damp, add fresh greens like kitchen scraps or grass clippings to give the microbes more food.

The pile is attracting animals. Bury food scraps under a thick layer of browns every time you add them. A wire mesh cylinder or a tight-fitting lid on the bin helps. Avoid adding meat, dairy, or oily foods. Some gardeners line the inside of an open pile with hardware cloth at the bottom and sides to deter burrowing animals.

The pile is full of flies. Flies are drawn to exposed food scraps. This means the greens are sitting on top instead of being covered. Add a thick layer of browns and turn the pile to bury everything. Black soldier fly larvae in the pile are a different story. Those are beneficial. They accelerate decomposition and are not a nuisance.

The compost is taking too long. Cold weather slows the process. In Zone 7a, a pile built in late fall may not reach usable compost until late spring or early summer. Keep adding material. Insulate the pile in winter with a layer of straw or leaves on the outside. Turning once a month during winter keeps it alive. A pile in full summer heat can finish in as little as eight weeks if you turn it every couple of weeks.

Using Finished Compost

Finished compost is one of the most useful amendments you can add to a garden. It improves soil structure, increases water retention, feeds beneficial soil organisms, and provides a slow-release supply of nutrients.

For garden beds. Work two to three inches of compost into the top six inches of soil before planting. This can be done in spring or fall. You do not need to measure precisely. A generous top layer worked in lightly is sufficient for most beds.

For established plants. Spread a one to two inch layer of compost around the base of plants, keeping it a few inches away from the stem. This acts as a slow-release fertilizer and mulch at the same time. Reapply once a year in the fall.

For potting mix. Mix one-third finished compost into a standard potting mix for a nutrient boost. Do not use pure compost in containers, as it can become compacted and retain too much water.

For seed starting. Do not use pure compost for seed starting. It is too rich and may carry pathogens that harm delicate seedlings. Mix one part compost with two parts seed starting mix at most, or better yet, save the compost for established plants and use a clean mix for seeds.

The Payoff

Composting is one of the most practical skills you can learn for a home garden. It turns something you discard into the foundation of your soil. The first pile always looks like a pile of junk. It smells funny. It looks like nothing is happening. And then, without any drama, it becomes dark, crumbly, and useful. The transition is quiet. It happens underground, out of sight, at the pace of organisms that do not answer to a calendar.

You will know it is working when you reach into the pile and your hand comes out with material that smells like a forest floor after rain. That smell is the sound of billions of microbes doing their job. Once you have a batch of compost, you will start seeing everything else in your kitchen and yard differently. Banana peels are no longer trash. They are tomorrows soil.
