Step-by-Step Brewing Process
Step 1: Prepare the water
Fill your five-gallon bucket with water. Ideally, let tap water sit out for twenty-four hours before use so the chlorine can dissipate. Chlorine kills microbes, and you do not want to kill the microbes in your tea. If you are using well water or rainwater, skip this step. Chlorine is not an issue.

Leave the pump running for twenty-four to thirty-six hours. Do not brew longer than thirty-six hours. After that, the microbial population starts to decline as the food supply runs out. Twenty-four hours is enough for a basic batch. Thirty-six hours gives you a higher microbial count, but you need to watch the smell.
Step 6: Check the brew
A properly brewed tea looks and smells like this:
- Smell: Earthy, forest floor, slightly sweet. If it smells sour, sulfurous, or like sewage, it has gone anaerobic. Dump it and start over.
